I’m definitely committed to eating healthy but am so very tempted by ‘real food’. Honestly, I don’t have the option to have a cheat day. The results of gluten, dairy and sugar take a long time to heal.
It seems my body can no longer bounce back. So, my happiness moments are when I discover a treat that’s not a cheat. That is, something that tastes so fantastic and ‘real food’ but doesn’t challenge my digestive system. Enter Buffalo Cauliflower Bites!! So reminiscent of Buffalo Chicken Wings, but without the meat and grease, the gluten, the dairy, the sugary sauces. These are a happy-dance!!
They go like this:
1.) Cut up a head of cauliflower
2.) Mix 1 cup water, 1 cup brown rice flour, some sea salt and garlic powder to taste.
3.) Dredge your cauliflower in the flour mixture.
4.) Roast at 450 for 10 minutes, flip and roast another 10 minutes.
5.) Melt a tablespoon of coconut oil and mix in a few shakes of tabasco sauce.
6.) Drizzle over the cauliflower.
6.) Continue to roast until the cauliflower is soft and slightly brown on the edges.
If you can eat the dairy and want to dip in your favorite blue cheese or ranch dressing, go right ahead! Still a winner!
